The Brew Cylinder fills with boiling water. 45 seconds of waiting. Water out, Puck Screen in place, the loaded portafilter clicks into the Brew Base with the bayonet lock. The lever comes down – slowly, guided by the weight of your hand, not force. Pressure builds on the gauge: three bar, five, seven. The first drops fall, dark and slow. The resistance of the lever settles into your forearm. No motor, no pump, no electronics in between – just you, the water and the puck.
That's the Flair 49 Pro in everyday use. A fully manual lever espresso machine with a 49 mm portafilter, an integrated pressure gauge and a Brew Path entirely in stainless steel – no plastic ever touches the brewing water. It sits between the Flair Neo Flex and the stationary Flair 58+2 (58 mm) and fills a gap that many home setups had: a lever setup with a café-level Brew Path, without the footprint of a 58 mm machine.

Why 49 mm – the real difference
The 49 mm portafilter isn't a cosmetic detail. At the same dose, the coffee puck sits deeper in a 49 mm basket than in a 58 mm basket – the cross-sectional area is smaller, so the puck is taller. What does that mean for the cup?
Longer contact time, more resistance
The water travels a longer path through the grounds. More resistance, more pressure build-up, more dwell time – that tends to bring more body and mouthfeel into the cup. The high-molecular compounds from Maillard reactions in particular (melanoidins, bound lipids, longer-chain sugars) benefit from this.
More forgiving grind Dial-In
The deeper puck forgives small grind fluctuations better than a flat 58 mm puck. If you work with a grinder whose adjustment isn't quite as fine, the 49 Pro takes you through Dial-In more relaxed. Even at coarser settings, extraction stays more stable.
Lower doses made practical
With the Pressurized Basket, a 10–15 g dose is possible, with the Professional (Non-Pressurized) Basket 14–20 g. That opens up shots at lower quantities that would look like a thin pancake in a 58 mm basket. For solo shots or light single origins, that's a real advantage.
To be clear: the 49 mm basket isn't universally better than 58 mm. It's different. 58 mm setups have advantages at higher doses and with finer profiling. 49 mm is more forgiving, more compact and tends to produce a denser mouthfeel. Which one suits you better depends on your setup and your taste – both paths are legitimate.
The Stainless Steel Brew Path – café level without electricity
One detail that sets the 49 Pro apart from earlier Flair models: the entire Brew Path is made of stainless steel. Brew Cylinder, Plunger, Hook – no plastic anywhere in the water path. Combined with a hollow stainless steel Plunger, engineered for better heat retention, that means faster preheating and a more stable temperature across the shot. The thermal inertia that used to sometimes cause a temperature drop during the shot is significantly reduced.
Preheating remains necessary – lower the lever, fill the cylinder with boiling water, wait 45 seconds, drain the water. For light roasts or cold days, a second preheating round is worthwhile based on our showroom experience. More effort than an electric machine, but part of the deliberate ritual.
No-Disassembly Workflow
If you have Flair experience: on earlier models, the Brew Head had to be partially disassembled between shots. Not anymore with the 49 Pro. The fixed cylinder with an integrated Valve Plunger allows consecutive shots without disassembly – lever out, refill water, next shot. That makes the 49 Pro practical for everyday sessions with two or three shots in a row, without interrupting the ritual.

The 49 Pro positions itself as the machine for someone who wants the lever character and the deliberate ritual – without the footprint, the cord and the electric preheating of the 58+2. If you want maximum control and reproducible shots with electric heating, you're better off with the Flair 58+2 instead. Both are valid paths.
Who buys the Flair 49 Pro?

Those coming from the world of pump machines who want to experience the manual ritual without moving straight into the 58 mm segment – the 49 Pro is more forgiving when it comes to Dial-In and makes the move into lever espresso more relaxed. Matching grinders and accessories
An espresso-capable grinder is a must for the Professional Basket. Do I need my own grinder for the Flair 49 Pro?
With the Pressurized Basket, you can also use pre-ground coffee or simpler grinders. For the Professional Basket (Non-Pressurized), you need an espresso-capable grinder with fine grind adjustment. Recommendations from our range: Varia VS4, Comandante C40 MK4, Timemore Sculptor.
How does the 49 Pro differ from the Flair 58+2?
The 58+2 has a 58 mm portafilter, an electrically preheated brew head (~5 min heat-up time) and is designed as a stationary flagship. The 49 Pro has 49 mm, fully manual preheating with boiling water and is more compact and portable without electricity. Both are fully manual – the choice depends on use case, space and the depth of ritual you want.
How long does preheating take?
According to the Flair Brewing Guide, around 45 seconds with boiling water in the Brew Cylinder. For light roasts or cold days, based on our showroom experience we recommend a second preheating round, so another 45 seconds with fresh boiling water. Plus the time it takes you to boil the water.
Do I need electricity for the 49 Pro?
No. The 49 Pro is fully manual – no electronics, no electricity, no pump. All it takes is boiling water, freshly ground coffee and a tamper. That makes it a good choice for travel, offices without a power connection, or deliberate off-grid setups.
What pressure is optimal?
The espresso zone on the gauge is marked in color between 6 and 9 bar. Classic 9 bar shots are reproducible, but the 49 Pro also allows gentler pressures (6–7 bar) for profiles with milder aromas. Above 12 bar, the gauge shows a stop zone – usually a sign of too fine a grind or too high a dose.
What's the difference between the Pressurized and Professional Basket?
The Pressurized Basket has a pressure valve and works with any grind size – including pre-ground coffee or simpler grinders. The Professional (Non-Pressurized) Basket requires an espresso-capable grinder with precise adjustment, but gives you direct insight into your extraction. Recommendation: start with the Pressurized Basket and switch once you've developed a feel for lever pressure.

The 49 Pro thrives on deliberate ritual – and on preheating. Our suggestion from showroom practice: take two weeks with the Pressurized Basket and Cozy Chocolate, before switching to the Professional Basket. Get to know the lever, how it feels as the pressure builds, when the sweet spot between 7 and 8 bar is reached. After that, with the Non-Pressurized Basket, you'll notice how much bean, grind and preheating shape the shot.
