Why do you need a stainless steel sieve for matcha preparation?
Matcha powder tends to clump. A sieve breaks up these clumps before the powder goes into the bowl – the result is a more even foam layer and less bitterness from undissolved powder. In the 3- and 4-piece sets, this step must be done manually with the chasen – the sieve makes it easier and more precise.
What water temperature for matcha?
