Tea Brewing in Practice
Basic rules for different types of tea:
- Black Tea (Assam, Darjeeling, Ceylon, Earl Grey): 95–98 °C, 3–5 minutes, 1 tsp per 200 ml
- Green Tea (Sencha, Bancha, Genmaicha): 70–80 °C, 1–2 minutes, 1 tsp per 200 ml – too hot makes the tea bitter
- White Tea (Pai Mu Tan, Silver Needle): 75–85 °C, 3–5 minutes, slightly more leaf volume
- Oolong (Tieguanyin, Da Hong Pao): 85–95 °C, 2–3 minutes, often re-infused multiple times
- Herbal and Fruit Tea: 95–98 °C, 5–10 minutes
- Matcha: 70–80 °C, frothed with Chasen (bamboo whisk)
- Cold Brew Tea: cold in the refrigerator, 6–12 hours brewing time – ideal with Hario Filter-in Bottle

What is a Hario Filter-in Bottle for?
The Filter-in Bottle is a Japanese innovation for cold brew tea: you fill it with tea leaves and cold water, close the bottle, let it steep in the refrigerator for 6–12 hours, and then pour out the clear tea through the integrated filter. Advantages: no heating required, softer aromas without bitterness, ready to drink immediately. Available in 300 ml (CHF 24.60–32.95) and Portable 400 ml (CHF 39.95).
Hario Leaf Tea Pot or Cha Cha Kyusu?
Both have an integrated filter. Leaf Tea Pot Pure (CHF 31.95–39.95): standard teapot with a top-mounted handle, classic shape. Cha Cha Kyusu Maru (CHF 33.80–41.50): Japanese design with a side handle, more traditional. Functionally similar – the choice is a matter of taste between classic European and Japanese form.
What can the Hario Tea Dripper Largo do?
The Tea Dripper Largo (CHF 48.80) is the tea variant of the Hario V60 design. You place tea leaves in it, pour hot water over them, and the tea drips controllably into the vessel below. For specialty tea workflow with precise water control and short brewing times – analogous to the pour-over workflow for coffee.
Is the Varia AURA Teapot worth it?
For setups with specialty demands: yes. The Varia AURA Teapot 1.0 L (CHF 79.95) offers app control for water temperature and brewing time, is exclusively available in Switzerland through CCC, and combines premium engineering with modern operating logic. It is disproportionately expensive for occasional tea enjoyment. For setups that treat tea with the same precision as specialty coffee: very sensible.
What water temperature for which tea?
Black tea: 95–98 °C. Green tea: 70–80 °C (too hot makes it bitter). White tea: 75–85 °C. Oolong: 85–95 °C. Matcha: 70–80 °C. For exact temperature control, kettles with temperature control or the Varia AURA with app control are recommended.
What quantities for tea?
Classic rule of thumb: 1 teaspoon (1.5–2 g) of tea per 200 ml of water. For stronger flavors: up to 2 tsp. For green teas with short brewing times: rather more leaves and brew for a shorter period (1–2 min) than longer brewing with fewer leaves. For cold brew: 1.5 g of tea per 100 ml of water, 6–12 hours in the refrigerator.
Filter-in Bottle for hot tea?
Functionally yes, but primarily designed for cold brew. For classic hot tea brewing, Cha Cha Kyusu, Leaf Tea Pot, or Tea Dripper Largo are more suitable.
