It's an original La Marzocco basket for the Leva – the lever machine from Florence, whose saturated group head maintains temperature and pressure with particular stability. Especially with a high dose like 21g, a precise, even basket pays off: it distributes water cleanly over the full puck and keeps the extraction well-rounded. Espresso is extraction via a weight ratio, usually 1:2; taste and smell are inseparable, a large part of which is retronasal. It is our observation that the choice of basket fundamentally alters the aroma profile.
