It's an original La Marzocco basket from Florence, manufactured with a hole analysis certificate (comparable in approach to VST): the perforations are measured and checked for uniformity, so that the water is distributed evenly everywhere – the basis for a clean, round extraction. With the saturated group head of your La Marzocco, which maintains temperature particularly stably, this pays off doubly. Espresso is extraction based on a weight ratio, usually 1:2; taste and smell are inseparable, a large part of which occurs retronasally. It is our observation that the choice of basket fundamentally changes the aroma profile.
