Varia VS6 Coffee Grinder – The modular flagship with variable RPM
The Varia VS6 isn't just a grinder – it's a system. With interchangeable burrs (58mm flat or 63mm conical), variable speed control (500-1600 RPM), and a zero-retention design, the VS6 sets new standards for single-dose grinders. As the only official Varia partner in Switzerland, we offer you access to this unique technology.
Why the VS6 is unique
As a coffee roastery, we experiment daily with grind size, roasts, and extractions. The VS6 is the first grinder that allows us to truly control everything: burr geometry (flat vs. conical), speed (500-1600 RPM), and grind size (5-micrometer increments). This isn't just a technical gimmick—it means real freedom.
Here's the truth: Most home baristas don't need this flexibility. The VS4 is perfectly adequate. But if you're among the 10% who really want to experiment, if you want to understand how RPM affects particle size distribution, if you switch between light Ethiopian beans and dark Robusta blends – then the VS6 is built for you.
Varia has created something special here: a grinder that grows with you. Today you use the 58mm flat burrs for espresso. Tomorrow you switch to 63mm conical burrs for more body and sweetness. No tools, no recalibration, in under 5 minutes. That's modularity as it should be.

Variable RPM: Why it's important
Many people ask themselves: Do I really need variable RPM? The short answer: It depends. For most people, a fixed RPM is perfectly adequate. But here's where variable RPM makes sense:
Low RPM (500-800): Fewer fines, greater clarity, less heat generation. Perfect for light, fruity filter coffees or lighter espresso roasts like Wild Peach . The aroma is preserved, the extraction is cleaner.
High RPM (1200-1600): Faster throughput, more body, more texture. Ideal for darker roasts like Cozy Chocolate or Very Nutty , where you want to maximize sweetness and body.
In practice? We grind our Nutty Delight at 1600 RPM for espresso. A perfect compromise between speed and clarity. For pour-over, we go down to 700 RPM – the aromas are more precise, the separation of flavor notes is impressive.
Interchangeable grinding discs: Flat vs. Conical
The VS6 is the only affordable grinder that supports both flat and conical burrs. What does that mean in practice?
58mm Flat Burrs (factory setting): Clarity, precision, clean separation of flavor notes. Brilliant for lighter roasts and aromatic coffees, filter coffee, and when you want to taste every nuance of flavor. This is your choice for specialty coffee.
63mm Conical Burrs (optional): Body, sweetness, texture. More fines result in a creamier crema and more body with darker roasts. Perfect if you like traditional espresso with a punch. Our Cozy Chocolate on Conical Burrs? Chocolatey, sweet, velvety.
Varia also offers SSP and titanium-coated burrs. For 99% of users, the factory-installed Supernova Flat Burrs are sufficient. But having the option is the luxury of the VS6.
Who is the Varia VS6 right for?
VS6 is more complex than VS3 or VS4 . But if you:
- You switch between different preparation methods daily (espresso, pour-over, AeroPress)
- You grind different roasts and want to avoid cross-contamination (zero retention)
- Love to experiment – optimizing RPM, burrs, and grind size
- You want a grinder that is upgradeable.
- Maximum control over each variable is estimated
...then the VS6 is worth the investment. It's not "better" than the VS4 – it's different. It's for people who want to delve deeper.
A typical workflow with VS6
Sunday, 9:00 AM: You weigh out 18g of Nutty Delight . The LED display shows 1600 RPM – your espresso setting. One press of a button, 18g in the collection cup.
The flour has an intense aroma of roasted hazelnuts. You fill your portafilter with it using the normcore dosing funnel and distribute it with the subminimal flick . Extraction on your Linea Mini R : 1:2.5 ratio. The shot is balanced, sweet, with a perfect body.
2 PM: You want a pour-over. Same beans, but now you turn the RPM down to 700. Coarser grind. The result? More clarity, the hazelnut notes are more precise, the caramel sweetness more subtle. Same beans, completely different profile. That's the VS6.

Frequently asked questions about the Varia VS6
Is the VS6 worth it compared to the VS4 ?
Only if you really want to experiment. The VS4 is the better choice for 90% of home baristas – cheaper, more compact, and simpler. The VS6 is for the 10% who need variable RPM and interchangeable burrs. Come by, we'll show you both and give you honest advice.
How often do I need to change the grinding discs?
Under normal use, the burrs last 5-10 years (500-1000 kg of coffee). After that, you can simply replace them. Varia offers replacement burrs, and the change takes 2 minutes without tools.
Is the VS6 really as quiet as claimed?
Yes. At 63 decibels, it's quieter than most mills on the market. No shrill whistling, but a deep, pleasant hum. You can grind in the morning without waking anyone.
Can I take the VS6 with me when I travel?
Yes! The included TSU-1 resin hard case is flight-safe and waterproof. Perfect for weekend trips or longer journeys. The VS6 weighs 10.7 kg – not light, but manageable.
VS6 or Weber EG-1 ?
Both are top-tier grinders. The Weber EG-1 has 80mm burrs (higher throughput, potentially better clarity) and costs significantly more. The VS6 is more compact, modular, and offers greater flexibility thanks to interchangeable burrs. For home baristas, the VS6 is the better package. For high-volume cafes: EG-1. Come by, we'll show you both.

Coffee roaster's tip: The VS6 truly shines with our Nutty Delight blend. At 1600 RPM with the flat burrs, you get a perfect balance between clarity and body – the hazelnut notes are precise, the caramel sweetness is present but never overpowering. Going to a lower RPM (700) unlocks the complexity – suddenly you taste nuances that were previously hidden. For the adventurous: Try Wild Peach at 600 RPM with the flat burrs – the clarity is breathtaking, each fruity note standing out on its own. And what if you switch to conical burrs? Cozy Chocolate at 1200 RPM becomes a creamy, chocolatey experience with incredible body.
