Varia VS6 – Single-Dose Grinder with Variable RPM and Interchangeable Burrs
You put 18 grams of beans into the hopper, the lid closes magnetically. On the LED display, you select the RPM – 900 today, because you want to drink the Wild Peach clean. A press of the button, the 300-watt motor starts quietly, the 58mm Supernova burrs work, and the grounds fall via the spring-loaded knocker through the angled spout into the magnetically held dosing cup. After about twelve seconds, 18 grams are in. A quick press of the bellows – the ionization needles have already statically neutralized the spout, the rest falls cleanly.
The VS6 is the flagship of the Varia family and combines two things that are otherwise mostly only found in significantly more expensive commercial grinders: variable speed from 500 to 1600 RPM and tool-free conversion between 58mm flat burrs and 63mm conical burrs in the same housing. Variable RPM – what speed changes in taste
Most espresso grinders run at a fixed speed. The VS6 lets you choose: 500 to 1600 RPM in 100-step increments, on the knob with haptic feedback and LED display. Lower speeds around 700 to 900 tend to produce fewer fines, the espresso becomes clearer in aroma separation, and the acidity emerges more defined. Higher speeds around 1200 to 1400 bring more fines, more body, more texture.
In the cup: a medium-light roast at 900 RPM shows fruity notes more clearly, the same bean at 1300 RPM gains density and structure for milk drinks. The effect is real, but subtle – greatest with lighter roasts, more subtle with classic dark espressos. This is our observation, one of many.
Interchangeable Burrs – 58mm Flat or 63mm Conical
The VS6 comes with 58mm Supernova flat burrs made of highly purified stainless steel. What's special: the housing accommodates both 58mm flat and 63mm conical burrs, interchangeable in a few minutes with the included toolkit and without recalibration. This gives you two fundamentally different grinding characteristics in one grinder.
The Nova family offers various profiles: Supernova as a balanced all-rounder, Hypernova Iridescent Titanium (titanium coated, HRC65) for more clarity in fine espresso, Hypernova Ultra (HRC67) optimized for durability and heat management, and Kilonova DLC (Diamond-Like-Carbon coating, HRC64–66) for light roasts with high consistency. All are available in 58mm flat and 63mm conical.
Low Retention, Active Ionization, Knocker
Single-dosing only works if nothing gets stuck between two doses. The VS6 solves this with three elements: the grinding chamber inclined at 76.5 degrees, active ionization needles in the spout that neutralize static on the coffee grounds, and a spring-loaded knocker on the dosing tube that mechanically releases the last particles. Retention is under 0.1 g per dose, the tube is removable for cleaning. All parts in contact with coffee are made of metal, the housing is anodized solid metal. An automatic shut-off after ten seconds of inactivity protects the motor.
Stepless Adjustment with 5-Micron Precision
The grind setting is stepless via the dial on top, 5 microns per unit over the range 0 to 60. A mechanical revolution counter helps to precisely relocate positions – even after a burr change or cleaning.

What goes with it
The VS6 works with any portafilter machine, such as from La Marzocco, Rocket, ECM or Profitec, and comes into its own particularly with manual lever extraction like Flair Espresso. Around 63 dB in grinding operation, one of the quietest grinders in its class. The brushless DC motor, the solid metal housing, and the low peak speed keep the noise consistently low.
What is the difference between VS3 and VS6?
The VS3 has 38mm conical burrs, a compact form factor, and fixed speed. The VS6 has 58mm flat or 63mm conical burrs, 500–1600 RPM variable, a 300W motor, LED display, active static control, and an 80g hopper.
Can I see the Varia VS6 before buying?

Roastery Tip
The VS6 is a tool for different profiles on the same machine for us. Cozy Chocolate at medium speed with the 58mm Supernova burrs develops a dense chocolate sweetness, Nutty Delight at higher speed gets texture for milk. Very Nutty delivers maximum body without acidity, and Wild Peach at low speed with the 63mm conical burrs shows its peach note more clearly. This is our recommendation, one of many.
