Why a few seconds of care show up in the cup
Coffee brings with it more than eight hundred aromatic compounds, and some of them are oils. It's exactly these oils that stay behind: in the portafilter, at the grinder's outlet, on the shower screen. Fresh, they're what makes coffee round and sweet. Left for a few days, they change, and then they carry something into the next shot that doesn't belong there.
