How the Siphon Works
In the lower globe, heat creates steam pressure that pushes the water up into the brewing chamber. There, the coffee extracts evenly. When you remove the heat source, the pressure drops, and the resulting vacuum draws the finished coffee through the filter back down. The result is a cup with the clarity of filter coffee and a full, round body. The Sommelier is operated with the included alcohol burner or with the optional infrared heater.
