Sanremo YOU — dual-boiler portafilter machine with Pressure Profiling and PID brew group

You lock in the portafilter. Tap the display and choose your profile. The pump starts up — quietly, without the frantic whirr of a vibration pump. On the display you watch the pressure curve build in real time. Three bar. Six. Nine. The first drop falls after eight seconds, dark and slow, then the flow turns honey-like, even, controlled. You take your hand off the display and let the machine run its course. It knows what it's doing.

This is the Sanremo YOU in everyday use. A machine that takes what happens on a Slayer or La Marzocco in a café and brings it into a form that fits your kitchen. Single-group, dual boiler, with a brew group that isn't fed by a thermosiphon but has its own 300-watt heater. With a rotary pump whose speed you control — not binary on or off, but as a curve. This isn't a machine that makes espresso. This is a machine you make espresso with.

Sanremo has been building machines in Treviso, northern Italy, since 1976. A family business, technology-obsessed, quiet. The YOU is their answer to the question of what an espresso machine for the home should look like when you translate the design language of the professional Café Racer range into a compact form. Anyone with a YOU on their counter has chosen a tool that looks like it came out of an Italian workshop — and feels that way too.

The moment that makes the YOU special

There are a few espresso machines with Pressure Profiling. What sets the YOU apart is the link between two worlds: the tactile paddle feel of a GS3 MP — and the repeatability of a digital system. You can steer the shot live with the paddle, feeling how the pressure responds under your hand. And then you save exactly what you just did as a profile. On the next shot you press a button, and the machine plays your movement back. Repeatability without giving up hands-on craft.

This is the little lifestyle question that every premium machine has to answer: what does it say about you when it sits on the counter in the morning? The La Marzocco Linea Mini says tradition and café icon. The GS3 MP says tactile and analogue. The YOU says something else — it's the machine of someone who wants a professional tool at home without committing to café iconography. It's technical, independent, Italian in its self-image. Nobody needs it. Those who want it know why.

Heating system: why the SR61 brew group is different

Most premium portafilter machines work with one of the three classic brew groups: E61 (thermosiphon), saturated group (brew group cast into the boiler, La Marzocco) or ring brew group (Profitec GO). The SR61 is none of these.

Instead of drawing heat from a boiler, the SR61 has its own heater — a 300-watt element right in the brew group, plus its own PID control loop. That means: the brew boiler has its target temperature, the brew group has its target temperature. Both independent. Both regulating. In testing (Kaffeemacher) the offset between target and actual at the basket was around 0.5 °C — and it can be fine-tuned further via a technical service menu.

What does that mean in the cup? On an E61 the temperature fluctuates slightly between shots, because the thermosiphon has to stabilise first. On a saturated group it's very stable, but the brew group is always at boiler temperature. On the SR61 you decide. You run the brew group at 92 °C for a bright Kenya, at 95 °C for a dense Brazil, and the machine holds it exactly — shot after shot, with no temperature-surfing compensation.

This is engineering detail that shows up, after three weeks of daily use, as more clarity in the cup. And as more confidence in your own dial-in work. When you change something, it was your change — not a fluctuation of the machine.

Pump and Pressure Profiling — the heart of it

The YOU's rotary pump runs at variable speed. Instead of a vibration pump that slams the pressure up to 9 bar with a high-frequency hum, the rotary pump builds the pressure as a curve — as steep or as flat as you set it.

Three ways to use it:

Manual with paddle

Hand on the paddle, you steer the pressure live during the shot. 0 to 12 bar, every position palpable, every change instantly visible on the display as a pressure curve. It's the most tactile operation that digital allows. Anyone coming from the GS3 MP world feels right at home — just with the bonus that the movement gets saved.

Volumetric

One button, the shot stops automatically. Six presets from the factory: ristretto, espresso, lungo — each single and double. For your morning coffee before you're awake. Brew ratio set digitally, shot time documented.

Profiles

Up to ten additional custom profiles programmable digitally, plus up to six lever profiles saveable from your paddle shots. That makes the YOU a machine for someone who keeps several beans on the go: one profile for the dense Cozy Chocolate, one for the bright Wild Peach, one for the competition shot on Sunday. Switch with a tap.

Display and operation — honestly

The touch display on top of the machine shows live pressure, live flow and shot time as a graph. All machine parameters are directly adjustable: brew boiler temperature, brew group temperature, pre-infusion, volume, auto-on and auto-off. An optional web app for remote diagnostics and profile transfer rounds it out — but nothing is app-locked. The machine works completely stand-alone.

An honest assessment from our showroom experience: the touch targets are small, the menu has depth. Anyone standing in front of the YOU for the first time needs 30 to 60 minutes to get familiar — after that it's fast and intuitive. We go through it together with you in the introductory course, so you're in control of the machine from day one.

Who buys the Sanremo YOU?

We see three profiles regularly in the showroom:

Home baristas who demand full control. Anyone who really uses Pressure Profiling, flow profiling and repeatable profiles — not as a feature on the box, but as a tool — gets a platform in the YOU that can carry them for several years. The machine grows with your experience.

Specialty coffee cafés and light-commercial setups. Hotels, office kitchens, boutique cafés with moderate volume. The configurability (branding with a logo, individual finish) makes it the machine for brand-conscious setups that don't want a white-label device on the counter.

Coffee roasters for trial shots and sample roasting. The YOU is popular as a compact test machine in roasteries, because it stores different profiles per bean and makes them comparable. In our own roastery it's part of the toolkit.

Ordering, delivery and advice

The Sanremo YOU can be ordered online at the Coffee Coaching Club, or collected in the showroom in Zurich Oerlikon or Bern. Delivery throughout Switzerland and to Liechtenstein in 2–4 business days. Financing via Heylight available.

With a YOU, the showroom visit is especially worthwhile, because the machine is configurable: colour, wood accents, tank or direct plumbing, even individual branding. We go through the configuration with you and fit it into your setup.

Introductory course included

When you buy a Sanremo YOU, an introductory course (around 60 minutes) is included — in Bern, Zurich or online. We go through extraction philosophy, the profile concept and your espresso ritual (around 5 minutes per shot, once you're dialled in). So the machine works for you from day one.

Everyday maintenance

Daily backflushing without detergent, backflush with detergent roughly every 50 shots (5 min). The descaling routine is guided via the machine menu. Modular construction — many components accessible without special tools. For maintenance or repair questions we are your point of contact in Bern and Zurich Oerlikon, with a Swiss Sanremo warranty and personal support.

Frequently asked questions

Does the Sanremo YOU have an E61 brew group?

No. The YOU uses the SR61 brew group — 58 mm standard, but technically its own concept: electrically heated, PID-controlled, without a thermosiphon and without a heat exchanger. Unlike the E61, the brew group's temperature is controlled independently of the boiler.

Is the YOU suitable for home use?

Yes. Sanremo positions the YOU as a home machine with light-commercial reserves. Anyone working to a high standard at home gets a platform that can carry them for several years.

Do I need an app for the YOU?

No. All functions can be operated directly on the machine's touch display. The optional web app is a complement for profile transfer or remote diagnostics, but not essential.

Which beans do you recommend for the Sanremo YOU?

The YOU is flexible — from darker espresso blends to lighter single origins. Our main recommendation for most setups: Cozy Chocolate, Nutty Delight, Very Nutty. If you want to experiment with Pressure Profiling and lighter roasts, round it out with Wild Peach.

How long is the heat-up time?

Around 15 minutes from cold. If you use the machine daily, set it to heat up at the time you want via the auto-on programme.

Can the YOU be descaled?

Yes, with the guided maintenance programme on the display. Given Swiss water hardness in Bern and Zurich we recommend a water filter or mineralising drops (Apax Labs TONIK / JAMM) to extend descaling intervals.

Which grinder suits the Sanremo YOU?

The YOU benefits from precise grinders. Often combined in the showroom: Varia VS6, Option-O Lagom 01, Weber Workshops EG-1, Mahlkönig E80 Supreme.

Can I combine the YOU with an external scale?

Yes. Acaia Lunar or Normcore scales sit under the drip tray. The YOU's volumetric dosing stops by volume — if you want brew-by-weight, add an external scale.

Do you offer a Swiss warranty and support?

Roastery tip

The YOU plays to its strengths when you keep several beans on the go, each with its own profile. My suggestion from roastery practice: set up three profiles. Profile 1 — a classic 9-bar shot for Cozy Chocolate and Nutty Delight, chocolate and caramel with a dense body. Profile 2 — a pressure decline for Wild Peach: a slow build to 9 bar, then gently down to 6 bar, which opens up the peach aromas without tipping into bitterness. Profile 3 — a short ristretto for milk drinks from darker roasts, a dense body that carries through the milk. With these three profiles you experience the machine's full range without falling into optimisation paralysis. That's my view from daily roastery work, one of many.
