Varia VS6 – Coffee Grinder with 58 mm Flat or 63 mm Conical Burrs
Buy the Varia VS6 in Switzerland: single-dose grinder with 58 mm flat burrs, optionally 63 mm conical, 500–1600 rpm.
You put the dose into the hopper, set the speed on the LED display and grind straight into the magnetic dosing cup. The same grinder takes two burr geometries: flat or conical.
The VS6 is Varia's largest grinder. It ships with 58 mm Supernova flat burrs in stainless steel; 63 mm conical sets are available as an upgrade. Coffee Coaching Club is the official Swiss importer of Varia.
What sets the VS6 apart
Swappable burr system
The removable unit takes 58 mm VS6 flat burrs and compatible 63 mm conical sets. Cut-outs make the burrs easy to grip. To swap, you unplug the grinder, follow the instructions for nut, burrs, springs and bearing, set the hopper to the zero mark and readjust the grind setting for the new set.
Flat: the starting point
The VS6 comes with 58 mm Supernova flat burrs in stainless steel. Two opposing cutting surfaces form the grinding path. This is the standard configuration for espresso and filter coffee with stepless adjustment.
Conical: a different grinding path
A compatible 63 mm conical set gives the VS6 a different grinding architecture: a central cone works inside an outer ring. Both geometries use the full speed range. Conical sets are sold separately; only sets listed for the VS6 fit.
Burr families for the VS6
Supernova: your reference
The uncoated Supernova flat burrs in stainless steel are included. Varia also offers Supernova with a gold titanium coating (flat) and a Supernova conical set in stainless steel.
Hypernova
Hypernova is the iridescent titanium variant, available as 58 mm flat and 63 mm conical for the VS6. According to Varia, the coating is only part of the specification; cutting geometry and recipe matter just as much.
Hypernova ULTRA
Hypernova ULTRA extends the range with plasma-treated sets, each as a flat and a conical unit for the VS6.
Kilonova DLC
Kilonova brings DLC-coated burrs for the VS6, as 58 mm flat or 63 mm conical. Varia sees the families as alternatives, not as a required upgrade.
The details in everyday use
Variable speed
The brushless 300 W motor runs at 500 to 1600 rpm. The LED display shows the selected speed, and haptic feedback accompanies the adjustment. This makes speed, alongside burr set and grind setting, a variable you can note down and repeat. Our observation: higher speed tends to bring more body, lower speed more aroma. That's one opinion of many.
Stepless adjustment with revolution counter
Each marked division corresponds to 5 µm of mechanical burr movement; the range runs from 0 to 60. A revolution counter helps you find your settings for espresso and filter again. According to Varia, the value describes the movement of the burrs, not the resulting particle size. The range 0–1 is not approved for grinding.
Dosing workflow
The magnetic dosing cup sits under the spout. Active ionisation needles reduce static as the grounds leave the grinder. The chute can be removed for cleaning and has a spring-loaded knocker. The hopper holds 80 g.
Built for the counter
CNC-machined aluminium and stainless steel, 13 cm wide and weighing 10.7 kg. Hopper, speed display, grind ring and dosing cup sit within one work area. After 30 seconds without operation, the grinder switches off automatically.
We judge extraction by weight ratio; 1:2 is a good starting point. Grinders are like engines: there is no objectively best one, only the one you enjoy. Our opinion is one of many.

Who the VS6 is made for
For everyone who wants to use burr geometry, burrs and speed as separate variables, for espresso and filter. If you want a more compact single-dose grinder, the VS3 (48 mm conical) or VS4 (53 mm conical) are the slimmer Varia models; the comparison is on VS3 vs. VS4 vs. VS6. If you're looking for 80 mm flat burrs, take a look at Weber Workshops or Option-O. Nobody needs the bigger grinder. Whoever wants it knows why.
Delivery throughout Switzerland and to Liechtenstein in 2 to 4 working days, click and collect in Bern and Zurich. Financing available. We answer questions about VS6 burr sets via [email protected] or by phone during business hours.
You can see a changing selection live in our showrooms in Bern (Gerberngasse 44) and Zürich Oerlikon (Hagenholzstrasse 50b). You can test several grinders and machines side by side in the espresso machine and grinder comparison in the showroom. A free consultation appointment or our advice tool help you narrow things down. Both are an option, not a requirement.
What goes with it
The VS6 grinds for any portafilter machine, for example from La Marzocco, Rocket, ECM or Profitec, and for lever machines from Flair Espresso. For everyone who wants an affordable, precise scale: Normcore. If you want an app and a flow-rate display: Acaia. For puck preparation there are WDT tools and tampers from Normcore or Weber Workshops, and for airtight bean storage Airscape.
Frequently asked questions
Which burrs come with the Varia VS6?
It ships with 58 mm Supernova flat burrs in stainless steel. 63 mm conical sets and further flat sets are available separately.
How do I switch between 58 mm flat and 63 mm conical?
Unplug the grinder, swap the unit following the instructions using the included tool kit, set the hopper to the zero mark and readjust the grind setting for the new set.
What does the speed change?
The grind setting determines the distance between the burrs; the speed determines how fast the rotating burr moves. Our observation: higher speed tends to bring more body, lower speed more aroma. Note both together with the burr set.
Is the VS6 suitable for filter coffee?
Yes. Adjustment is stepless from 0 to 60, and Varia explicitly names the standard configuration for espresso and filter.
What is the difference between the Varia VS3 and VS6?
The VS3 has 48 mm conical burrs and is more compact. The VS6 has 58 mm flat burrs, optionally 63 mm conical, 500–1600 rpm, a 300 W motor, an LED display, active ionisation and an 80 g hopper.
Can I see the Varia VS6 before buying?
Yes, in our showrooms in Bern (Gerberngasse 44) and Zürich Oerlikon (Hagenholzstrasse 50b). Not every model is set up at all times. Write to us at [email protected] before your visit, and we'll check whether the VS6 is currently on display.
Tip from the roastery: For espresso with body and sweetness, Cozy Chocolate and Nutty Delight are our main recommendation: chocolate, caramel and nut. Very Nutty is for everyone who wants maximum body without acidity. If you'd like to discover something fruity, you'll find it in Wild Peach. Other beans work just as well. That's our recommendation, one of many.
