The proteins in the milk stabilize the fine bubbles, the fat gives the foam its density, and the steady rotation keeps both finely distributed.
The spout that gives it its name — known internally as the crocodile shape — with its double-curved guide grooves, shapes the stream so the lines stand out more clearly as you pour.
