Varia VS6 – Single-Dose Grinder with Variable RPM and Swappable Burrs
18 grams of beans go into the hopper, the lid clicks on magnetically. On the LED display you choose the speed – 900 today, because you want to taste the Wild Peach cleanly. One press of the button, the 300-watt motor starts up quietly, the 58mm Supernova burrs get to work, and the grounds drop through the spring-loaded knocker and the angled chute into the magnetically held dosing cup. After about twelve seconds, 18 grams are in. A short press on the bellows – the ionisation needles have already neutralised the static in the chute, and the rest falls cleanly after.
The VS6 is the flagship of the Varia family and combines two things usually found only in significantly more expensive commercial grinders: variable speed from 500 to 1600 RPM and tool-free switching between 58mm flat burrs and 63mm conical burrs in the same housing. The Nova burr family (Supernova, Hypernova Titanium, Hypernova Ultra, Kilonova DLC) broadens the spectrum even further. Coffee Coaching Club is the exclusive Swiss importer of Varia.
Variable RPM – what speed changes in the taste
Most espresso grinders run at a fixed speed. The VS6 lets you choose: 500 to 1600 RPM in steps of 100, on the dial with haptic feedback and an LED display. Lower speeds around 700 to 900 tend to produce fewer fines, the espresso becomes clearer in aroma separation and the acidity comes through more defined. Higher speeds around 1200 to 1400 bring more fines, more body, more texture.
In the cup: a medium-light roast at 900 RPM shows fruity notes more clearly, the same bean at 1300 RPM gains density and structure for milk drinks. The effect is real, but subtle – most noticeable with lighter roasts, more understated with classic dark espressi. That's our observation, one of many.
Swappable burrs – 58mm flat or 63mm conical
The VS6 comes with 58mm Supernova flat burrs made from highly refined stainless steel. What makes it special: the housing accepts both 58mm flat and 63mm conical burrs, swappable in a few minutes with the included toolkit and without recalibration. That gives you two fundamentally different grind characteristics in one grinder.
The Nova family offers different profiles: Supernova as a balanced all-rounder, Hypernova Iridescent Titanium (titanium-coated, HRC65) for more clarity with fine espresso, Hypernova Ultra (HRC67) optimised for durability and heat management, and Kilonova DLC (Diamond-Like Carbon coating, HRC64–66) for light roasts with high consistency. All are available in 58mm flat and 63mm conical.
Low retention, active ionisation, knocker
Single dosing only works if nothing gets stuck between two doses. The VS6 solves this with three elements: the grind chamber angled at 76.5 degrees, active ionisation needles in the chute that neutralise the static in the coffee grounds, and a spring-loaded knocker on the dosing tube that mechanically frees the last particles. Retention under 0.1 g per dose, the tube is removable for cleaning. All parts in contact with coffee are metal, the housing is anodised solid metal. An automatic shutoff after ten seconds of inactivity protects the motor.
Stepless adjustment with 5-micron precision
The grind setting is stepless via the dial on top, 5 microns per unit across the range 0 to 60. A mechanical revolution counter helps you find positions precisely again – even after a burr change or a cleaning.

Who the VS6 is for
The VS6 suits everyone whose grind characteristics should keep evolving over the years. If you use 58mm flat burrs today and add the 63mm conical burrs later, you have two grinders in one housing. If you're looking for a more compact single-dose grinder with a smaller footprint, you'll find in the VS3 or VS4 the leaner alternative. If you're after 80mm flat-burr precision, take a look at Weber Workshops or Option-O; the endgame alternatives are found on EG-1 vs. Lagom P80 vs. Lagom 01. Whoever wants it knows why.

What goes with it
The VS6 works with any portafilter machine, for example from La Marzocco, Rocket, ECM or Profitec, and really comes into its own with manual lever extraction like Flair Espresso . For weighing, there's the affordable Normcore scales or the Acaia scales with app and flow rate. For puck preparation, the Normcore WDT tool and tamper or the Weber Workshops Moonraker and Really Nice Tamperwork well, and for airtight storage Airscape.
Frequently asked questions
What does variable RPM change in the cup?
Lower speed (700–900) produces fewer fines and more clarity in aroma separation, especially with lighter roasts. Higher speed (1200–1400) brings more body and texture. The effect is real, but subtle with dark espressi.
How long does switching between 58mm flat and 63mm conical take?
A few minutes with the included toolkit. The housing is designed so both burr formats fit without recalibration.
Which burr family suits which coffee?
Supernova is the balanced all-rounder, Hypernova Titanium brings more clarity with fine espresso, Hypernova Ultra is optimised for durability and heat management, Kilonova DLC is especially suited to light roasts. All available in 58mm flat and 63mm conical.
Is the VS6 suitable for filter and pour-over?
Yes, stepless from very fine to coarse. The 63mm conical burrs are especially strong for filter – the conical geometry delivers a characteristic particle distribution with more body and depth.
How loud is the VS6?
Around 63 dB while grinding, one of the quietest grinders in its class. The brushless DC motor, the solid-metal housing and the low peak speed keep the noise consistently low.
What's the difference between VS3 and VS6?
The VS3 has 38mm conical burrs, a compact form factor and a fixed speed. The VS6 has 58mm flat or 63mm conical burrs, 500–1600 RPM variable, a 300 W motor, LED display, active static control and an 80 g hopper.
Can I see the Varia VS6 before buying?
Yes, in the showrooms in Bern (Gerberngasse 44) and Zürich Oerlikon (Hagenholzstrasse 50b), in daily use. Bringing your own beans is welcome.
Roastery tip
For us, the VS6 is a tool for different profiles on the same machine. Cozy Chocolate at medium speed with the 58mm Supernova burrs develops a dense chocolate sweetness, Nutty Delight gets texture for milk at higher speed. Very Nutty delivers maximum body without acidity, and Wild Peach shows its peach note more clearly at low speed with the 63mm conical burrs. That's our recommendation, one of many.
